A Santa Sofia, vera porta d'accesso al cuore del Parco Nazionale delle Foreste Casentinesi, Monte Falterona, Campigna dal versante emiliano romagnolo, e quindi alla sua parte più preziosa e meglio conservata, il "ristorante" è La Contessa: fin dall'800 è stato il punto di riferimento culinario della zona, ed i gestori che nei decenni si sono alternati hanno saputo conservare lo "spirito gastronomico" della Romagna Toscana, riproponendolo inalterato fino ai nostri giorni, nei suoi gusti ed aromi così spiccatamente riconoscibili.		In Santa Sofia, the main entrance in the heart of the Parco Nazionale delle Foreste Casentinesi, Monte Falterona, Campigna from Romagna, and therefore to its most precious and best preserved part, the restaurant par excellance is "La Contessa". Since the 19th century it has been the culinary reference point of the area, and the managers who alternated have been able to preserve year after year the "gastronomical spirit" of the area of Romagna and Toscana. As a matter of fact, its well-known tastes and aromas have been maintained intact until present times.
I fratelli Amadori, attuali gestori, da veri santasofiesi "doc", non sono ovviamente venuti meno ad una consuetudine così ben radicata: hanno perciò affiancato ad essa anche una cucina moderna, che non rinnega gli insegnamenti della tradizione, ma trae anzi spunto da essi per ottenere dei risultati davvero innovativi!		The Amadori brothers, who are the current managers, come from Santa Sofia. Without a doubt, they have not interrupted the old tradition: however, they have completed the typical dishes with a modern cuisine which does not deny the ancient tradition, but it gets from it suggestions to obtain great results!
Le due sale da pranzo, spaziose ed accoglienti, possono ospitare banchetti per 80 persone ... alla Contessa il forno, naturalmente, è a legna...		The two dining-rooms are spacious and cosy, and can house banquets for 80 persons ... At the Contessa restaurant the oven runs with wood....of course.
