The brown trout and the marble trout represent two major species of the wildlife characterizing the protected area, drawing several recreational fishing-lovers.
They are both farmed in the area in an agricultural holding which, collaborating with the Park Authority for the safeguard of the autochthonous fish species, produces eggs, fries, and young trout for the repopulation programs organized by the Provincial Administration of Cuneo or carried out by private fishing reserves. A part of this production is used for the retail sale in the holding.
The quality of meat, firm and tasty, is guaranteed by the use of mountain spring water and a diet based on products with a low fat content; their supply with a non-intensive rationing follows the slow growth rhythms characterizing these species and respects their natural life cycle.
A real specialty is represented by another salmonid fish, the charr, less known but with top-quality meat.
Experimentally, the holding also produces snails, in association with the Snail Farming Center of Borgo San Dalmazzo: both as material to be sown and as snails for consumption.
