Gourmets and naturalists has known the Garda truffle for centuries. At the end of the 16th century, Grattarolo claimed that the mountain dwellers of the Garda area "find truffles, and many species of fine mushrooms". According to the tradition, truffles are used to enrich risotti and tagliatelle. Among the most widespread species, there are Tuber Uncinatum, Tuber Aestivum (scorzone or black summer truffle), Tuber Mesentericum and several varieties of black truffle, among which Tuber Melanosporum (also called Norcia black truffle). Tuber aestivum, a very widespread species in the area of Brescia, supplies remarkable percentages, if we consider the total truffle production in Lombardy.
