Bread

Fragrance is the secret of the so-called "casareccio" (homemade bread), which is still produced by various bakeries in all the Municipalities of Monti Aurunci Park. It is different from the common white bread for three particular features: wheat flour containing all the parts of the grain, natural leaven (locally called "criscito") which is renewed every day from the bread making of the day before, and the wood-burning oven which, thanks to the thermal properties of the clay bricks, slowly releases warmth and enables a gradual cooking, from the inside to the "crust".
The most famous kinds of bread are Esperia bread and Spigno olive bread, containing black olives.
