Ur-Paarl nach Klosterart, which in German means "the original double rye bread of the convent" is the oldest variant of the typical Vinschger Paarl from Val Venosta. Its traditional shape is a kind of flattened "eight", obtained by joining two round and flat loaves of bread. This is why it is called paarl, which means couple. Its size is variable: the diameter ranges from 10 to 30 cm and the thickness from 2 to 3 cm. The recipe custodians are the Benedictine monks of the convent of Monte Maria, above Burgusio in the municipality of Malles.
