In the past, when the subsistence of the mountaineers living in the Alps exclusively depended on their own territory, also the most impracticable stretches of land used to be exploited: therefore, the impracticable meadows dominating Val Grande were characterized by the presence of flocks of sheep. Today, only a few producers transform the goat's milk into tome whose taste, very different from the taste of the industrial goat cheese, recall the wilderness features of Val Grande.
