| Porchetta is a pig bred in the wild and cooked in the oven. The breeding method is very important, since it influences the consistency and taste of the meat. Before cooking, the meat is cleaned and often boned, to be flavored with pepper, salt, garlic, and fennel; cooking requires 6 to 8 hours and is carried out in wood-burning ovens. Porchetta Viterbese is very tasty, and is different from Ariccia's for the presence of fresh fennel; it is sold in cylindrical boxes giving the opportunity to cut it into slices. Since porchetta is made of already cooked and flavored meat, it can be used to prepare pasta, buffets, snacks, and toasts. |
