Canestrelli of Polonghera | Definition The name "canestrello" is given to characteristic sweets produced in different areas of Piemonte (Canavese, Valsusa, Biellese), with different ingredients, production methods, and organoleptic-sensorial qualities. The name "canestrello" derives from the characteristic wicker baskets (called "canestri") used to package the pastries after cooking. Canestrello is a very thin and fragile pastry with irregular shape given to its preparation. The main ingredients are flour, butter, eggs, and sugar. According to the production area, vanilla, cocoa, lemon, orange, coffee, mint, coconut, nutmeg, cloves, rum, white wine, red wine, marsala, or milk can be added.
- Production Area: Canestrelli are a local product of Borgofranco d'Ivrea, di Ivrea, Mazzé, Montanaro, Rondissone (all Municipalities of the Canavese area), but also of Vaie (TO) and other Municipalities of Valle di Susa, Polonghera (CN) and Crevacuore (BI).
- Legislative Protection: Canestrello is classified among the "Traditional Agri-foodstuffs of Regione Piemonte", according to art. 8 of the Legislative Decree 30th April 1998, n. 173 and the Annex to the Decisions of the Regional Council 15th April 2002 n. 46-5823.
