Chivasso Nocciolini | Definition In the field of gastronomy, the tiny sweets called "nocciolini" are the symbol of Chivasso: they can be found for sale in several shops of the town and are the protagonists of a festival held in the town center in mid-June. Chivasso Nocciolini are sweets known all over the world. They are produced according to a traditional method: delicious round hazelnuts of Piedmont are toasted, ground, and mixed with sugar and egg white. When it reaches the ideal consistency, the mixture is put into the special tank of a machine dating back to more than half a century ago, which distributes the correct quantity of product on cooking slabs, in the shape of several small buttons ready to be baked. Once ready, they are left cooling and are packaged in special pink or blue bags, according to the producer, or in transparent boxes. The ingredients used to prepare Chivasso Nocciolini are only three: shelled and toasted hazelnuts of Piedmont, sugar, and egg white.

- Legislative Protection: Chivasso Nocciolini are classified among the "Traditional Agri-foodstuffs of Regione Piemonte", according to art. 8 of the Legislative Decree 30th April 1998, n. 173 and the Annex to the Decisions of the Regional Council 15th April 2002 n. 46-5823.
