Cri Cri Pralines | Definition Cri Cri pralines are prepared with round hazelnuts of Piedmont, sugar, cocoa, cocoa butter, additives (corn starch, maltodextrine, soy lecithin), and aromas. Cri Cri pralines are spherical: they consist of a toasted hazelnut covered with black chocolate and finished with tiny sugar spheres duly colored and aromatized. The product is wrapped up mechanically with a double ribbon, in six different colors.
- Production Area: Cri Cri pralines are produced in some sweetshops of Turin.
- Tools used: The materials and equipments used to produce pralines are usually used in the confectioner's shops. The packing of Cri Cri pralines consists of polythene bags.
- History: According to some historians, the art of praline-making was discovered by the chocolate manufacturers from Turin, who have been the first to process chocolate in Europe. According to the tradition, the first praline was invented by chance by an assistant "pâtissier" who, to conceal a defect in the candied almond, covered it with black chocolate.
In Torre Pellice, in the Province of Turin, a skillful confectioner from Pinerolo started to produce in 1886 the so-called "Cri Cri", that have remained unchanged until present times.
- Legislative Protection: Cri Cri pralines are classified among the "Traditional Agri-foodstuffs of Regione Piemonte", according to art. 8 of the Legislative Decree 30th April 1998, n. 173 and the Annex to the Decisions of the Regional Council 15th April 2002 n. 46-5823.
