Fresh Tomini Canavesani | Definition Fresh Tomino Canavesano is a fresh cheese based on cow's milk, with an acid-rennet coagulation. It has a fresh and soft texture, obtained after a short maturation period of 1-2 days. It has regular and cylindrical shape, flat sides with a diameter of 5-7 cm, lateral sides of 3-4 cm, and a weight of 60-70 grams. It has no rind. The texture is milky white, soft, wet, and can be spread. Taste and perfume recall the fragrance of fresh milk with pleasantly acid notes. Fresh Tomino Canavesano is packed in food paper and each package consists of a "roll" of six tomini. It is a traditional product you can find on the table of the local people in any season. It is widespread in the Canavese area, to the extent that you can find it in all grocery stores and now also in supermarkets.

- Legislative Protection: Fresh Tomino Canavesano is classified among the "Traditional Agri-foodstuffs of Regione Piemonte", according to art. 8 of the Legislative Decree 30th April 1998, n. 173 and the Annex to the Decisions of the Regional Council 15th April 2002 n. 46-5823.
