Trofarello sour cherries are fresh fruits of the species Prunus cerasus, with a soft and transparent acidulous pulp. Sour cherries are called in Piedmont "griote".
In the involved area, the most widespread varieties are ancient varieties or clones gaining ground locally and cultivated according to eco-sustainable or organic fruit cultivation methods; sour cherries are picked when they reach a suitable ripening stage, chosen and packed according to the regulations in force and the demand of the market.
The most famous varieties include Marisa or Barbero sour cherry. It is an acid cherry-tree cultivar, halfway between sour and sweet cherry. It is characterized by a long stalk, a bigger fruit than the classical sour cherry, with a poor consistency, dark red color and sweet-acidulous taste, a slight bitterish aftertaste, and a strong peel.
Trofarello sour cherry has a late ripening with respect to cherries and "graffioni", to the extent that their harvesting lasts until mid-July.
The limits of Trofarello sour cherries are the poor resistance to handling and its vulnerability to the early attacks by Ragoletis cerasi.
- Production Area: The production area is limited to the Municipalities of Trofarello and Moncalieri (TO).
- Legislative Protection: Trofarello Sour Cherry is classified among the "Traditional Agri-foodstuffs of Regione Piemonte", according to art. 8 of the Legislative Decree 30th April 1998, n. 173 and the Annex to the Decisions of the Regional Council 15th April 2002 n. 46-5823.
