One of the typical dishes in the Karst cooking is the "jota", a soup made of sauerkraut (called "capuzi garbi" in Treiste's dialect, meaning "acid cabbage"), beans and often potatoes. It is flavored with spare ribs or other smoked pork meat.

The "gnocchi di susine" represent another traditional dish. They are small potato cases stuffed with plums, with a crispy sweet core made of toasted bread, sugar and cinnamon. This dish can be served both as first course and as dessert. This dish is of Bohemian origin and was brought in the region under the Austro-Hungarian domination. Plums were the most widespread cultivation, especially on the Slovenian border, as it is proved by the Slivovitz, a plum spirit.



Gradina hosts a room for the promotion of the local products, where one can purchase both wines and cold cuts, cheese, honey and olive oil supplied by the Farms of the Italian and Slovenian Karst region.
It is a kind of showcase which allows visitors to learn about the scents and tastes of the whole Karst region.
