Pecorino cheese include cheese with hard and cooked texture obtained from sheep's milk. They are different, with different organoleptic features.
According to the maturation process, it is possible to distinguish several kinds of cheese: fresh (sweet) pecorino, maturing for 30 days, and mature (strong) pecorino, maturing fro 180 days in a cool, dark, and not very airy place, so that it can acquire taste with the passing of time.
This cheese is characterized by an intense taste with an aftertaste of pasture hay and grass. It is also mixed with truffle, chili pepper, and other spices.
