The olive tree is becoming an increasingly important cultivation in the Park territory, although the involved surface is still limited. There are documents mentioning the settlement of the olive tree in some niches in the past centuries and some centuries-old specimens are still present in the Park.
As far as the new olive groves are concerned, the first olive trees have been planted at the end of the 1990s. The dominating varieties come from Tuscany (Leccino, Frantoio, Correggiolo, and Pendolino) or from the area of Brisighella (Nostrana di Brisighella and Ghiacciolo).
At the moment, there are a few agricultural holdings selling the oil obtained from the pressing of the olives they produce.
