Sapa liquor is a traditional product of the Marches characterized by a fluid consistency, resembling a concentrated syrup, and is obtained from the must cooking. The brilliant brown color with golden shades anticipates a slightly sweet scent, with a delicate note of smoke. Its taste is slightly acidulous, with a caramel aftertaste. The rural tradition of the Marches suggests to combine sapa with dried and smoked goat's milk ricotta, on a slice of polenta or together with traditional sweets. For centuries, it has been the sweetener of the poor.
