Colli Orvietani and Colli Martani Oil

The territory is interested by the PDO Umbria, subzones Colli Orvietani and Colli Martani, with top-quality and traditional oils. The main varieties are Moraiolo, Frantoio, and Leccino.

Moraiolo: It is the main variety forming the geographical designation Colli Assisi-Spoleto (60% minimum). A medium-sized olive, round and pulpy, it is very rich in top-quality oil. The plant is small, very fruitful, and is the best liked by the producers from Umbria for its perseverance and cold resistance: for these features, it is usually cultivated in the high hills.
Frantoio: Medium-sized olive tree, rather strong, with very crooked and bent main branches and hanging minor branches. Its olives are rather big and rich in pulp, with a tapered egg shape and rich in top-quality oil. It is not very cold resistant, and therefore prefers the low hills. It mainly forms Colli Martani, Colli Amerini, and Colli del Trasimeno.
Leccino: It is an imposing plant with rich foliage. Its olives are rather big and pulpy, with an egg-cylindrical shape. Although it is not characterized by a constant production like Moraiolo, it is very cold resistant. It represents almost the 50% of Colli Orvietani.
Given their organoleptic features, these oils are top-quality oils, medium fruity, particularly adequate to be used raw on bruschette and raw vegetables, as well as in cooking in general.
