The truffle is a mushroom belonging to the family Tuberaceae, class Ascomycetes. Truffles have an edible body forming at a depth of 40-50cm and growing in the soil next to the roots of some trees, mainly oaks, ilex trees, and hornbeams. In Umbria there are various species of truffles: white truffle, black truffle, summer or winter scorzone truffle, bianchetto, the winter truffle, and moscato truffle. The penetrating perfume belongs only to ripe truffles. The search is carried out with the help of a dog and, before using the truffle, it is necessary to clean it carefully and gently with a soft brush to remove the soil particles.
In the protected area of Monte Subasio the picking of the tuber is regulated.
