Olea europea sativa var. Olivastrone (also called Olivastro) is mainly used for the production of oil. The fruit (drupe) is of medium-small size, with a color from green to dark violet, tapered and oval shape, and several small lenticels. The tree is characterized by its big size, strength, good but not constant productivity. It can be found in the olive groves of the Provinces of Rome and Rieti. The fruits ripen in January, and usually its processing marks the end of the oil production and the beginning of the celebrations after the winter toil.
