Raw milk has no counter-indication, since it complies with very strict quality parameters that are periodically assessed. It contains in various quantity antimicrobial proteins and other important anti-infective agents providing a protection to children. It contains very nourishing whey proteins and essential enzymes whose role in human health has not been thoroughly studied yet. Above all, it is a live food and, like yogurt, acts like a stimulant of the immune system and promotes the vitality of the intestinal flora. Milk and cream that have not been pasteurized have a delicate taste and are very appreciated by cheese-makers, important chefs, and by connoisseurs.
