It is a variety of semi short-grain rice mainly known and used in the area of Mantua. Today it is difficult to find it pure for sale. It is extraordinary, and characterized by a small grain becoming longer during the cooking, it has a low stickiness, and holds up to cooking. According to the tradition, it is ideal for risotto with pumpkin, with snails, or with "luganega" (sausage), but it is also ideal to prepare other recipes, it depends on the tastes.
