Lunigiana's Caciotta

The Lunigiana's Caciotta is produced in medium-small sizes, with an uneven round shape and a white-yellowish color, a slightly salted taste and intense flavor. After milking, the milk is poured into a copper pot and heated to 30°C-35°C to curdle.
