The Mondiola of Garfagnana is a big salami which, due to its size, is also called "mortadella of Lunigiana". It has a U shape and is tied with a laurel leave in the middle. It is a quiet lean pork salami produced in the Serchio valley and in Garfagnana, but it is possible to find it even in the mountain areas near the border with Liguria, where it is called "mortadella of Lunigiana". Only pork meat is used for its production: the lean meat is ground, salted sugared, flavored and spiced.
