This oil is exclusively produced with Taggiasca olives which is cultivated in the Western Ligurian Riviera, in the area extending from the valleys of Imperia up to the French border.
This olive is characterized by a late ripening, February - April. This is the period in which the best oil is produced on the Western hills.
The main features of this oil are its straw-yellow colour, its delicate fragrance, its sweet taste reminding of almonds. All these features are preserved for a long time thanks to the cold processing of the olives in stone olive-presses.
