It became a DOC in 1976. It is produced with grapes coming from the
Municipalities of S. Pancrazio Salentino, Salice Salentino, S. Donaci
and Brindisi. There are six different kinds of wine: red, rosé, white,
white Pinot, sweet Aleatico, and strong sweet Aleatico.
Red Salice
Salentino has a more or less intense ruby red color with a brick color
if aged. It has a very enjoyable ethereal perfume and a taste which is
strong, dry, velvety, warm, and harmonious. Its alcoholic strength is
of 12 degrees, and it is served with meat and roasted meat. The "red
vintage" is served with game and seasoned cheese.
Rosé Salice Salentino has a rosy color tending to a light ruby red, a
persistent and winey smell, a velvety dry and fruity taste if young. It
has an alcoholic strength of 12 degrees and must be served at a
temperature of 16°C. It must be served with light first dishes, fried
food, charcuterie, white meat, and cheese.
White Salice Salentino has a light straw color with greenish
reflections; it has a delicate and fruity perfume if young, a lively
and sparkling taste. It has 11 degrees of alcoholic strength and must
be served at a temperature of 10°C. It is served with appetizers,
shellfish, mollusks, and soft cheese.
Salice Salentino White Pinot has a straw yellow color and a dry taste.
It has an alcoholic strength of 11 degrees and must be served at 10°C.
It is served with soft cheese, light appetizers, vegetables, soups, and
light fish.
Salice Salentino Sweet Aleatico and Salice Salentino Strong Sweet
Aleatico have a more or less intense burgundy red color with orange
reflections if aged; the perfume is delicate, the taste is full, warm,
and sweet. The former has an alcoholic strength of 15 degrees, the
latter of 19 degrees. Both must be served at a temperature of 12-14°C
with desserts, or as entertainment wine.
