The Salmon Trout comes from North America, exactly from the Pacific coast, and was imported in Europe at the end of the 19th century. Thanks to its extraordinary adaptability, resistance, and greediness, it is the most widespread fish in the Italian fish farming activity.
It is a very curious fish (it often passes among the fishermen's boots), grows rather fast, and its maximum recorded size is one meter for 10-12 Kg. However, it happens rarely, since it is usually sold when it weights 250 gr.
It is a very greedy fish, a carnivorous predator living on insects, small fish, and crustaceans. If it mainly lives on the latter, its meat will go from a white color to rosy and to bright red.
