It is the local trout, the trout of Piedmont, the trout of the Province of Cuneo. It lives in uproarious and cool waters, rich in oxygen. It is rather shy, tends to conceal itself in the semi-darkness, waiting for a prey and ready to dart. It is a very delicate trout, difficult to breed, slow to grow, but it is the best trout for connoisseurs, whether they are fishermen or simply "gluttons".
The maximum recorded weight is 5-6 Kg.
