It is the most elegant freshwater fish and, according to what most people say, the best one to eat. It has very lively colors and white leading edges on the fins. It has North-American origins and was imported to Europe at the end of the 19th century.
Thanks to its two rows of small but saw-edged teeth, it is a good predator. It does not reach record sizes: the maximum recorded length is of 40cm for two kilos of weight. When it reaches sexual maturity, the male is subject to a morphological change: it acquires a much more stocky and aggressive aspect, but maintains its very lively colors.
Its farming is difficult (even more difficult than the brown trout farming), because the brook trout is very vulnerable to temperature changes and water oxygenation.
