The gofre is a crunchy and round-shaped waffle characteristic of Upper Valle di Susa and Valle Chisone.
It is obtained by baking a dough of flour, water, milk, and yeast on special cast iron shaped griddles (the so-called "gofriere", or waffle irons), previously oiled with lard in order not to make the dough catch and to give it the characteristic taste.
After cooking, gofri can be eaten with salty products (cold cuts and cheese) or sweet products (chocolate cream, jam, honey, or the very rare lustré, an extract of juniper berries also used to season meat).
