Badda Bean

The small treasure of the cooking tradition of Madonie
The vegetable gardens of Polizzi Generosa, in Madonie Park, have been housing for over two centuries a medium-small and round bean, called in dialect "badda", meaning "ball".
It is a two-color bean, with a clear division between the two colors that can be ivory with rosy or orange spots, or ivory with dark violet spots, almost black. Without a doubt, they are two local ecotypes that have adapted to the features of the local hills.
It is a sapid bean, with herbaceous and even salty notes, slightly astringent, with chestnut and almond hints in the end. With cooking, it acquires an adequate creaminess, without crumbling. It is easily digestible and does not cause swelling during digestion.
