It consists of short pastry filled with tuma (a mountain cheese), candied pumpkin, egg whites, chocolate, sugar, and cinnamon, baked and served cold. Madonie Sfoglio is mainly produced in the areas of Polizzi Generoa, Petralia Sottana, and Castellana Sicula but, given its very ancient presence in the territory, its production includes many varieties (for instance, sfoglio filled with pistachio) that have taken root in many Municipalities of Madonie.
