Broad beans (Vicia faba maior) have very important nutritional properties since they contain many proteins, carbohydrates, vitamins, mineral salts, and fibres (in particular in the hull), but they have a low-caloric content, less than one third of the cereals content. The cultivation - very ancient in the Mediterranean area - finds the ideal conditions in the area of Carpino because of the clayey soil, rich in calcium. Here it is possible to sow and to harvest the best broad beans of Apulia.
