It is a rather particular vegetable whose main production center is
Soncino. Other adjacent towns are also interested by its production,
which has been successfully carried out for at least a century.
It
is a tap-root, up to 40 centimeters long and rather thin, hard, and
white. It must be cooked and has a slightly bitter taste given to the
presence of a particular substance called "inulin" with a
tonic-digestive function.
It represents one of the most typical
vegetables of the province of Cremona, and is usually sold well-cleaned
and in transparent packaging.
