Parco di Veio

The dairy production plays an important role in Veio Park and includes products obtained from cow, sheep, and goat's milk. Pulled-curd cheese made with raw milk and matured for about 10 days, not cooked. Rinds of about 400 g, it can be simple or filled with anchovies and olives. It has a straw yellow color and a sweet taste. It is slightly salty and flavored in its filled version.
