The dairy production plays an important role in Veio Park and includes products obtained from cow, sheep, and goat's milk. The product Fior di Latte, deriving from the processing of raw cow's milk, is a green pulled-curd cheese, soft and with lactic fermentation, that can weigh up to 500 g. It has a characteristic round or oblong shape with a small head, knot or plait-shaped, and has no rind. It must be preserved in the fridge and maintained in the same water where it cools down after shaping it. It must be eaten when it is fresh.
