A series of "very fresh" products not undergoing any maturation process, but sold as soon as they are ready. Their common feature is freshness. They are made with cow's milk and are characterized by a soft, fine, and white texture. They do not have rind and are ideal to prepare cold dishes, above all in summer, together with bread with oil, cherry tomatoes, and salad.
Each product has its own features and shape, according to the different traditions.
