Zolfino Bean

Also called "fagiolo del cento" (because sown on the hundredth day of the year) or Burrino bean, Zolfino Bean is small, round, yellow, and has a thin hull. It is cultivated between the river Arno and Pratomagno at 250, 300 meters, but also higher, up to 600 meters. It loves meagre soils and does not survive in the plain, because its roots - extremely superficial - do not tolerate the slightest water stagnation. It is usually sown in April, often in the terraces under the olive trees, so that water can slip away among the stones of the dry-stone walls.
