Both Gabiano plateau and the plain of the Casalese area in the territories of Frassineto Po, Borgo San Martino, and Villanova Monferrato are suitable for the cultivation of this salad with large and soft leaves forming a cylindrical head 30-35 cm high, entirely white at the moment of the harvesting. For its seasonality - with production between October and December when other vegetables are scarce - Pan di Zucchero has had a considerable demand by consumers in the latest decades. To the extent that, recently, sowing and transplanting has been carried out also in spring for the May and June harvest. The autumn product is preserved under porches and roofs, rarely in the fields under heaps of straw.
