The soils surrounding Castelnuovo Scrivia are suitable for the cultivation of the onion. The local varieties are two: the golden onion, with a round and regular shape, with several very robust and copper-colored outer strata and a white pulp with a sweet taste; and the red onion, with a red-violaceous bulb, a sweet taste and, as the former, it can be preserved for long periods.
After the harvesting - at the end of August/September for the golden onion and at mid/the end of August for the red onion - the bulbs are left for 10-15 days on the ground to dry in long rows. Afterwards, they are put into clean and dry boxes to favor the passage of air or in well-aired heaps. Onions are sold in bags from 1 to 5 kg.
