The organic pasta is the Park's newest product, but it stands out thanks to its organoleptic properties deriving from the particular production processes and from its "organic farming" certification. At present, three shapes of pasta are available: the "Liane del Parco" (Park's Lianas), the "Nidi di San Rossore" (San Rossore's Nests), nest-shaped spaghetti, and the typical pappardelle called "Onde del Gombo" (Gombo's Waves).
The Park's organic pasta is produced with durum wheat cultivated according to the organic farming methods. Flour keeps all the wheat's organoleptic properties and gives pasta its typical "dark" color. The handmade processing and the slow drying improve pasta's quality and taste.
