This pine nut is collected in the coastal pinewoods within the Protected Area. The oil contained has a high value from the diet and nutritional perspective thanks to the high unsaturated fatty acids content such as the linoleic acid and the oleic acid. The color is light yellow, the texture doughy and not crunchy, the taste is pleasant, on average aromatic and slightly resinous.
The pine nuts of the Park are used to produce a cream which can be spread on the toasted bread or used to season the pasta.
