Emmer wheat (Triticum dicoccum) is a wheat variety belonging to the Gramineae family, also called "paddy wheat" since, after threshing, the caryopsis is still covered by the glumes and lemmas. Therefore, to be used, emmer wheat must be cleaned in order to eliminate the chaff.
The cultivation of emmer wheat of Acquapendente boasts very ancient origins, and the seed is a local variety which is disappearing. The old farmers recall that it was associated to legumes (lentils and beans) to prepare tasty soups.
