Olive oil
The municipality of San Dorligo della Valle - Dolina is the cradle of the local olive cultivation, and it represents the most significant reality, on the level of the olive cultivation, in all the provincial and regional territory. Olive trees were introduced in this province during the Roman age, and in more recent ages also the empress Maria Theresa used to season her dishes with the olive oil coming from these lands. The ideal environment for the olive cultivation is determined by the mild (proximity to the sea) and not very humid climate, by the fresh and drained soil, which guarantee the growing of the new vegetation in spring and in summer. There is the risk of frosts (as those occurred in 1929 - the worst one - 1956 and 1985), but the product's high quality leads the farmers to keep on cultivating the olive trees.
