Gradoli Purgatory Bean is a fresh alimentary product cultivated in the homonymous Municipality (80%) and currently also in a part of the Municipality of Acquapendente (20%). The local variety of the bean is cultivated in the territory from time immemorial, as it is witnessed by the lunch organized since the 17th century in Gradoli on Ash Wednesday, the so-called "Purgatory Lunch", where the bean becomes the main dish. The features of the product depend both on the traditional techniques, which do not use chemical products, and on the typology of the soils.
